"One cannot think well, love well, sleep well, if one has not dined well." - Virginia Woolf, A Room of One's Own

I saw this quote in a friends home (thanks A & B!) and thought it was perfect. To me, it is fact.

I wanted to add a food section to the website. I LOVE food. I love making food. I love eating food. And I love the way food can bring people together, conjure up a memory or just put a smile on someones face.

Feel free to read along as I add my favorite culinary delights to this page.

Enjoy!!

How could I create this page and not start with my favorite Lemon Curd recipe! :-) This is one of my family's favorites! It's a special treat in our house and as soon as my 3 1/2 yr old sees me juice the lemons he starts jumping up and down. :-) Serve it with your favorite scones or do what I do...make some fresh whipped cream, grab a spoon and dig in. :-)

Lemon Curd ~ Makes 2 1/2 cups

2 cups sugar

1 cup fresh lemon juice (about 6 lemons)

4 large eggs plus 4 large yolks, beaten

1/4 cup finely grated lemon peel (about 3 lemons)

1 1/2 sticks unsalted butter, cut into pieces

1. Set a fine-mesh strainer over a medium heatproof bowl next to the stove. In a heavy, medium saucepan, whisk together the sugar, lemon juice, eggs, egg yolks and lemon peel. Add the butter and cook over medium-low heat, stirring constantly, for 5 minutes.

2. Lower the heat and simmer, stirring, until the mixture thickens and registers 160 degrees on an instant-read thermometer, about 5 minutes. Strain the mixture into the prepared bowl, then press a sheet of plastic wrap directly onto the surface. Let cool to room temperature. Transfer to an airtight container and refrigerate for up to 1 month.

Enjoy!!
